Job Description:

Amherst College invites applications for the Second Cook - Garde Manger position. The Second Cook - Garde Manger is a full-time, year-round position, starting at $21.78 per hour. Given Amherst's distinction as one of the most diverse liberal arts colleges in the country, the successful candidate will demonstrate the ways in which they bring value to and will work towards supporting a broadly diverse community.

The Second Cook supports the efforts of Amherst College Dining Services in providing the diverse campus community with excellent service and production of our menus. This position assists the culinary team with producing and implementing menu items. This individual takes appropriate actions to support a diverse workforce and participates in the College's efforts to create a respectful, inclusive, and welcoming work environment.

This position ensures that the quantity and quality of our production are consistent with our standards and works with all members of the team to meet and exceed the expectations of our customers. This individual produces menu components from fresh and exceptional ingredients and is proficient in the technical skill and knowledge required to achieve this, being well-versed in food, its history, flavors, and current trends.

The work schedule varies and corresponds to the College's operational needs, position may assist with morning coverage in student dining or assist with catering and campus-wide events. As our work is central to student life, there are periods of peak demand that occur at a variety of times throughout the day, week, and year; a flexible schedule with extended shift times is required. In addition, the position is designated as providing essential services and should report to work or remain on duty even though the College is closed.

Summary of Responsibilities:
  • Provide operational supervision, both directly and in conjunction with the First Cook, over the daily culinary operations within the Garde Manger/salad department
  • Monitor and maintain quality standards within the salad department. This includes recipe accuracy, taste tests, and rotation of products in walk-ins and on the salad bar
  • Provide and maintain the tools, information, resources, and support necessary for individual and team success
  • Coach and supervise prep cooks on storage, portioning, and handling of menu items
  • Provide oversight of all assigned areas for compliance with health, safety, and sanitation standards and regular inspection of walk-ins and salad bar areas
  • Maintain the accuracy of production schedules and usage reports and communicate deficiencies and ordering needs to appropriate personnel.
  • Supervise sanitation standards of all areas and monitor staff's use and knowledge of time and temperature as a control
  • Maintain a commitment to the quality of our resources and work to prevent loss
  • Effectively collaborates with a diverse group of colleagues and students
  • Assigns daily task lists to all team members and ensure record keeping of all completed tasks are maintained
  • Ability to inventory, identify preparation needs, and assign tasks
  • Coordinate the distribution of goods to key areas for service
  • Participates in the day-to-day production of menu items needed to serve our community
  • Ensure all areas are maintained in an orderly, clean, and sanitary manner, as well as oversee the complete breakdown, cleaning, and sanitizing of all equipment.
  • Ensure production of menu items follows department standards
  • Ensure recipes are followed, uniform production standards are met, and all items are of the highest possible quality
  • Help create, manage, and serve seasonal, fresh menus from exceptional ingredients in collaboration with the Executive Chef and Executive Sous Chef
  • Assist with product and process refinement
  • Assist with new product research and development
  • Corrects discrepancies in production sheets and recipes
  • Regularly checking your Amherst.edu email is required to stay up to date on college-wide and departmental communications. This includes communication by email, message boards, and The Daily Mammoth. Important information is shared through these communications that affect your job and help you stay up to date on specific departmental updates, upcoming meetings, and events
  • Learning and using Workday to manage clocking in and out for shifts, time off requests, and all other functions required to manage your personal information
  • The individual has daily interaction with the campus community, involving both verbal and written communication. This includes but is not limited to accepting the direction, training, and support provided by supervisors, communicating with customers regarding their needs, suggestions, and concerns, and reporting operational issues, concerns, and needs through appropriate channels


Qualifications:

Required
  • Associate's Degree in Culinary Arts or Hospitality
  • 3 to 5 years of related experience
  • Equivalent combination of education and five years of experience in lieu of minimum education and related experience
  • Valid Driver's License and successful credentialing required in order to operate college vehicles
  • This position requires the ability to read and comprehend instructions, short correspondence, and memos; the ability to write correspondence; and the ability to effectively present information in one-on-one and small group situations with other employees of the organization
  • ServSafe Manager and Allertrain Allergen Manager Certifications (or completion within 3 months)
  • This position involves frequent exposure to extreme heat and cold, wet and humid environments, sharp tools, machinery, chemicals, grease-laden vapors and fumes, and high noise levels
  • Commitment to working with a diverse and inclusive community
  • Pre-employment physical/lift test


Preferred
  • Food preparation experience, including hot and cold food production
  • Supervisory experience, including proven success in training, coaching, and growing a team
