JOB SUMMARY:

 In the absence of the Chef, the sous chef is in charge of the kitchen staff, food production, safety, and sanitation.    The Sous Chef must be able to lead and to delegate responsibility to others in a positive and efficient manner. 

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Have passion for fresh food and creativity in the work place and bring the Bon Appetit philosophy to the rest of the staff in a positive way.
  • Be a proper example for staff; on time or early to shift, in full clean uniform (including hat, name tag, and apron), professional attitude towards associates and managers, and using proper language for a professional kitchen. Lead by example; promote professional attitude and behavior in the work place.
  • Ensure that all safety standards are followed and assist in promoting safe behavior through training as well as by example.
  • Take temperatures of all foods and keep all logs current per health code/EcoSure standards.
  • Responsible for the coding of invoices, daily log entry, and the correlations of the weekending packet.
  • Take accurate weekly inventory and makes sure all prices are updated
  • Assist in the menu writing process. 
  • Assist in making the production sheets for the weekly menu.  This includes making sure that the sheets are followed and signed off on.
  • The writing and placing of produce, meat and grocery orders as per production needs.
  • Be involved in daily food production and assist the kitchen staff as needed.
  • Help create and implement new concepts and menu items; making sure the production is consistent and true to the original concept.

 

SUPERVISORY RESPONSIBILITIES:

Responsibilities include training employees; planning, assigning, and directing work.  This also includes interviewing and hiring employees; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.             

Preferred Qualifications:

  • Culinary degree preferred
  • Two years of culinary supervisory experience
  • High volume production and catering experience is essential
  • Previous experience managing cost controls
  • Desire to learn and grow with a top notch foodservice company
