Ensure food consistency, quality and presentation. Compliance with all safety and sanitation standards and regulations; monthly kitchen and lodge inventory and inspections. Team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability with continuing efforts to deliver outstanding guest service and financial profitability. JOB DUTIES AND RESPONSIBILITIES: To ensure quality food, safety, and service at Trail's End Lodge, this position is a full-time cook as well as on-site supervisor for the F&B operation. Control food costs based on forecasting, efficient food purchasing and production. Control labor costs and carry out administrative functions pertaining to forecasting, payroll, scheduling, training, supervising, discipline, etc. Assuring quality and consistency. Motivate and train staff Maintain safe and sanitary working conditions with accordance to health codes. Ensure that high standard of dress, personal hygiene, and safety is maintained by all employees. Think positively and collaborate with Management team Maintain a positive rapport with guests, owners, and associates REPORTING SUPERVISOR: Assistant General Manager EMPLOYEES SUPERVISED: All Aspen personnel SUPERVISORY RESPONSIBILITY: This position supervises all employees in the Aspen Room and is responsible for their performance management. Works closely with AGM to ensure all goals are met. UNUSUAL WORKING CONDITIONS: Must be willing to work various hours, holidays and weekends EDUCATION REQUIREMENTS OR EQUIVALENT: High School diploma or equivalent. PREVIOUS EXPERIENCE REQUIRED: Minimum 6 months' experience in a professional kitchen or hotel environment. Must be 21+ years old.
