Organizational Unit Overview |
The Department of Nutrition Science offers multidisciplinary approaches to promote human health and well-being through the food and nutrition. The Department applies the biological, physiological, behavioral, and social sciences to understand and address challenges in dietetics, nutrition, and food systems. A hallmark of our work is the integration of "big science" innovations into our core values-learning, discovery, and engagement-to make a difference in individuals, families, and communities. There are two options within the Bachelor of Science in Nutrition and Dietetics degree: the Didactic Program in Dietetics (
DPD) and the Nutrition with Science (NS) option. Both options are primarily oncampus, face-to-face programs that provide many opportunities for students throughout their course of study. The Nutrition Science Department also offers a nutrition minor, a Master's degree and a dietetic internship. This position is housed through the Department of Nutrition Science, but includes a coordinator position for a 3-year grant-funded program called: Fresh Start/Expansion and Enhancement of the Mobile Fresh Start Program to Address Cardiometabolic Health Disparities with the Uninsured in Rural Eastern North Carolina.
The goal of the Fresh Start program is to comprehensively address cardiometabolic health accessible for uninsured patients is not currently available within rural, Eastern North Carolina. This will be accomplished by:
(a) Expanding geographic reach (adding 5 rural
ENC counties)
(b) Expanding eligibility to cardiometabolic risk (e.g., obesity, prediabetes, diabetes, prehypertension, hypertension)
Enhanced resources , virtual implementation options, to better connect with remote rural communities and on-going access to support/resources
This will be accomplished through enhanced continuation of 3 integrated/connected services :
1. Education to build health and food literacy via a short lesson (knowledge) and hands-on activities (skills, self-efficacy), physical activity and cooking to develop skills and self-efficacy
2. Counseling and goal setting via telehealth/telephone reinforcing knowledge, skills and confidence gained in education towards individualized action, problem solving, and goals

Job Duties |
This is a part-time, 30 hour per week, time-limited position.
One program coordinator will be hired to oversee the program's expansion to new counties, of services, and enhancement of program components (e.g., education approach, behavioral support, healthy food access). The roles of the coordinator will include developing all data collection tools using institutional software (e.g., REDCap), managing all data files, and analyzing all programmatic data. Supporting the PD/PI in all human subject research reviews (
IRB applications, amendments, compliance). Travels to each clinic and community sites for collaboration meetings as well as to enroll participants and collect evaluation measures and trains and supervises recruitment/enrollment teams of student research assistants, interns, and Navigators. Assist with training all the program staff, including research assistants, interns, student Navigators, volunteers, and the onboarding of new clinical and community partners. Assist with development of recruitment/enrollment processes to meet the needs of individual clinic and community partners. Maintain and develop new community relationships to ensure consistent food resources for patients. Maintains regular communication and sets meetings as necessary with community and clinical partners. Manage, track, and report all grant metrics to the PD/PI. Oversee the development of programmatic educational resources for patients and student volunteers. Co-lead all implementation aspects of the program including group classes, provision of a healthy food/produce prescription, and support/training/supervision of
ECU undergraduate student Navigators/Health Coaches. Assists with leading administrative duties for sustainability efforts (e.g., cooking classes and outreach) as well as program administrative duties including purchasing for gas, equipment, and ingredients for culinary demonstrations and other supplies (e.g., printing) as needed. Coordinates efforts to recruit student interns and Navigators internally and externally to
ECU. Maintains scheduling, training, support, supervision, and evaluation for student interns, Navigators, volunteers. |
Minimum Education/Experience |
Bachelor's degree; or equivalent combination of training and experience. All degrees must be received from appropriately accredited institutions. |

Preferred Experience, Skills, Training/Education |
Preferred experience includes experience with community engaged research, data collection, obtaining consent from research participants, working with and collaborating with community partners and working within a research team. Experience drafting presentations and/or manuscripts for submission to peer-reviewed journals. Experience in community engaged and/or non-profit volunteer and/or paid work. Experience in community engaged research, during undergraduate or graduate studies. Experience with
SPSS and/or qualitative data collection (e.g. interviews, photovoice). Research experience and use of tools like REDCap would be highly desirable as well as
IBM
SPSS. Individuals with experience developing training materials and supervising others will be given preference. Experience with clinical coursework and/or volunteer and/or work experience is also preferred. |
