Leprino Foods Company, a global leader in the dairy food and ingredient industry, is seeking a Cheese Vat Operator to join our team located in Roswell, NM. Leprino Foods is the world's largest supplier of mozzarella cheese and one of the largest suppliers of premium dairy nutrition ingredients. The Vat Operator purpose is to pasteurize milk, operate Vat equipment, apply correct amount of Rennet and monitor steps to make cheese according to customer's specifications following a given recipe for each product; Maintaining a clean environment and adhering to all the GMP's, SOP's, and Critical Control Points pertaining to Food Safety and USDA regulations. At Leprino Foods, starting compensation for this role typically ranges between $21.68 and $23.41.In addition, anight shift premium of $1.25 per hour is added for hours worked between 6 PM and 6 AM. We Ask of You:
- Inspect and adjust Vat room control panel (s), computers, separators, feed rates, sweet cream, and charts to check for milk temperatures and milk speed; replace charts as required.
- Make appropriate adjustments to transfer product to correct Vat, DMC, and Whey department.
- Follow procedures for inputting correct pH, and temperature levels into computer.
- Perform correct procedures as necessary for legal pasteurization. Maintain legal pasteurization records.
- Read and properly interpret recipe instructions to mix correct Rennet, Calcium, Chloride, phosphoric acid levels, and other ingredients used to make cheese according to customer's specifications.
- Change pipes and elbows to start CIP process, making sure all pipes are connected the right end to avoid product and chemical mixtures.
- Properly clean and sanitize all equipment as required by company procedures, maintain goodhousekeeping in area.
- Maintain Good Manufacturing Practices at all times.
- Demonstrate good safety behaviors and constantly apply them by following all applicable safety rules and regulations.
- Communicate as required with Supervisors, Forepersons, other departments, and coworkers.
- This position is responsible for food safety and food quality.
- Must be able to communicate well across departments such as Milk Receiving, DMC, Quality Control, Forepersons and other co-workers.
- Must be able to make computer adjustments to enable silos to run and direct milk to specific vat tanker(s).
- This position requires standing, walking and climbing up ladders (if applicable), lifting, assembling/disassembling pipes.
- Operator must be able to take samples and test them for correct pH levels on a frequent basis.
- Position requires constant data entry of pH levels for each product being run.
- Must be able to perform CIP (Clean in Place) duties and apply proper chemical dosage to effectively clean all equipment being used.

- Ability to perform essential job functions safely..
- Must be a minimum of 18 years old.
- Must be able to work Sunday - Saturday, off-shifts, weekends, holidays, and required overtime to support a 24 hour/7 day operation.
- Must be able to work a minimum of 8.5 hours.
- Demonstrated ability to complete work assignments with high degree of accuracy

Physical Demands and Work Environment
- This position will be exposed inside ambient temperatures and may include a wet / slippery environment with loud noise in varying degrees of temperature
- Specific vision may be required for this position, including close vision, distance vision, color and depth perception, and the ability to read computer screens for extended time periods
- Must be able to lift and carry up to 50 pounds
- Bending, squatting, reaching, and climbing up stairs/ladders are required throughout the shift.
- Standing and walking are required throughout the shift.
