Job Description
DIVIDER 1. Equilibrate materials flow through system to maximize throughput and quality. 2. Perform equipment set-ups, diagnostic checks, pre-op inspections, routine adjustments, routine equipment cleaning, and preventative maintenance. 3. Perform routine audits including panning, baking, and slicing for size, color, weight, diameter, orientation, and shape. 4. Enter and analyze audit data and make appropriate adjustments, and corrections to equipment, and/or process. MIXER 1. Maintain a consistent flow of dough batches to the divider system. 2. Perform equipment set-ups, pre-op inspections, temperature, ingredient and system checks, routine cleaning, and minor adjustments to batches, as needed. 3. Track ingredient usage and ingredient codes, as well as maintaining ample amounts of ingredients in the bins. OVEN/PROOFER OPERATION 1. Balance materials flow through system to maximize throughput and quality. 2. Perform system inspections & cleaning ALL 1. Perform lubrication and preventive maintenance as required. 2. Track downtime, communicate equipment issues, promote job safety and the quality process. 3. Monitoring and record keeping of process, system, and quality performance. 4.
