Reports To: Vice President of Food & Beverage

Job Summary: Solitude Mountain Resort is seeking a dynamic and experienced Executive Chef with extensive banquet experience to lead our culinary team. The ideal candidate will be responsible for overseeing all culinary operations, ensuring the highest standards of food quality, and delivering exceptional dining experiences for our guests. The Executive Chef will play a pivotal role in menu development, kitchen management, staff training, and maintaining cost control measures while fostering a creative and collaborative kitchen environment.

Key Responsibilities:

Culinary Leadership:

  • Develop and implement innovative menus for all resort dining outlets, including restaurants, banquets, and special events.
  • Collaborate with individual restaurant Chef's on developing and implementing menus for all seasons.
  • Ensure consistency in food preparation and presentation across all dining venues.
  • Stay updated with culinary trends and introduce new techniques and recipes to enhance the dining experience.


Banquet Management:

  • Oversee the planning, coordination, and execution of all banquet functions, ensuring high-quality food and service.
  • Collaborate with the Events Manager to create customized menus for various events, including weddings, corporate meetings, and private parties.
  • Ensure timely and efficient service during banquets, maintaining exceptional guest satisfaction.


Kitchen Operations:

  • Manage day-to-day kitchen operations, including inventory management, overseeing ordering and maintaining kitchen equipment.
  • Implement and enforce food safety and sanitation standards in compliance with local and Alterra health regulations and expectations.
  • Develop and maintain standard operating procedures to ensure efficient kitchen workflows.
  • Set up a control system through recipes; assuring quality and portion consistency


Team Management:

  • Recruit, train, and mentor culinary staff, fostering a positive and productive work environment.
  • Conduct regular performance evaluations and provide constructive feedback to enhance team performance.
  • Promote teamwork and collaboration among kitchen staff, front of house staff and other departments.
  • Oversee scheduling and time sheet approval, ensuring accurate and timely submission.
  • Must be able to resolve problems, handle conflict and make effective decisions under pressure.


Financial Management:

  • Develop and manage the Food & Beverage department's budget, ensuring accurate labor, cost control and profitability.
  • Monitor food, supplies and labor costs, implementing strategies to minimize waste and optimize resources.
  • Analyze financial reports and adjust operations to meet budgetary goals.


Guest Experience:

  • Interact with guests to gather feedback and ensure their dining experience meets or exceeds expectations.
  • Address guest concerns and complaints promptly and professionally.
  • Maintain a visible presence in dining areas during peak service times.


This position will require flexibility and understanding that additional job responsibilities will arise.

Qualifications:

  • Proven experience as an Executive Chef or similar leadership role in a high-volume resort or hotel environment.
  • Extensive banquet and event catering experience.
  • Culinary degree or equivalent professional training.
  • Strong knowledge of current culinary trends and best practices.
  • Excellent leadership, communication, and organizational skills.
  • Ability to work under pressure and meet deadlines.
  • Proficiency in budgeting and financial management.
  • Commitment to food safety and sanitation standards.
  • Passion for delivering exceptional guest experiences.
