JOB DESCRIPTION:

In keeping with the Mission/Vision/Values of Centerstone, the Food Services Manager/Cook oversees and provides food services to residential patients; promotes wellness, recovery and nutrition to sustaining better heath. It is expected that the Food Services Manager/Cook function as an integral, cooperative member of the agency team of professionals and will provide outstanding internal and external customer service and maintenance of appropriate documentation. This position works independently (or under the direction of supervisor) when performing job tasks/providing services. As part of Centerstone's team-oriented philosophy, the Food Services Manager/Cook is expected to actively participate in variety of cross-functional teams and performance improvement initiatives.

ESSENTIAL DUTIES

Completes job requirements with independent action and resourcefulness and seeks out additional duties during periods of downtime. Organizes time, effort, and use of resources to achieve desired outcomes. Centerstone expects all staff to have a strong desire to provide excellent customer experience; to comply with the rules and regulations of those organizations to which we are accountable; to have high ethical and professional standards of conduct; must possess the flexibility to work with consumers at various stages in their personal growth; and to have an attitude of wanting to continuously improve their own performance as well as that of Centerstone. This also includes consistently returning phone calls and e-mails within 24 hours and updating voicemail/out of office e-mail, as well as consistently using pleasant tone and having a helpful attitude.

Meet or exceed Key Performance Indicators (KPI's) expectations. Follow the Illinois Division of Substance Use Prevention and Recovery ( SUPR) licensure rules, Medical rules, Public Health rules, State Fire Marshall rules, Federal Confidentiality rules, and any other rules which pertain to the job.

Maintain kitchen and dining areas in compliance with the Illinois Department of Public Health and

Department of Human Services' Office of Alcoholism and Substance Abuse regulations. Complete all food service sanitation procedures during food preparation. Store food in refrigerators according to regulations; milk in a separate box. Store dry goods off the floor and according to regulations.

Clean and/or defrost refrigerators weekly or as needed.Ensure the kitchen is clean. Cleaning includes: stove, counter, contact surfaces, cabinets, ice machine, ice maker, floor, freezers, sinks and under, storage room and areas, small appliances, milk cooler, steam table, dishwasher, refrigerators, carts, stove hood, walls, equipment, and other items as assigned. Wash and sanitize dishes after each meal. Dispose of garbage daily. Assist with menu planning. Keep lists of food items difficult to prepare and patient complaints about food. Meet with dietician prior to seasonal menu preparation to discuss lists. Prepare foods as indicated on the menu plan developed and approved by a Registered Dietician according to patient population.

Ensure special diets are prepared according to physician's order. Receive special diet request from nurse/ technician on duty. Review diet manual for foods to provide until menu from dietician is received. Prepare and shop for foods for special diets as indicated on menu from dietician.

Prepare any substituted item approved by supervisor, when occasion occurs.

Document any food substitutions in the substitution log book as substitutions are made.

Maintain a list of foodstuffs needed from wholesaler and local vendors. Place orders with sale

representatives as needed and put away ordered received, rotating stock.

Report and request from Chief Executive Officer or designate the equipment needed for meal

preparation.

Complete all paperwork on orders obtained and/or received and submit to the Bookkeeper/

Administrative Secretary.

Ensure equipment is in proper working order. Check equipment on a regular basis. Complete

assigned maintenance form and submit per protocol on all equipment in need of repair.

Assist in training and orienting new cooks and in ensuring kitchen is maintained appropriately.

Present Monitor compliance with health and fire regulations regarding food preparation and

serving, and building maintenance in lodging and dining facilities.

Monitor food preparation methods, portion sizes, and garnishing and presentation of food to

ensure that food is prepared and presented in an acceptable manner.

Schedule and receive food and beverage deliveries, checking delivery contents to verify product quality and quantity.

  • Maintain food and equipment inventories, and keep inventory records.
  • Schedule staff hours and assign duties with Clinical Manager approval.
  • Investigate and resolve complaints regarding food quality, service, or accommodations.
  • Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation.
  • Assure policies and procedures regarding dietary service are implemented.
  • Supervise cooks and kitchen area during breakfast, lunch, dinner, and evening snack. Train staff and cooks in dietary service procedures.
  • Assist in the development of activities and objectives for dietary services.
  • Oversee the ordering of the food and supplies from wholesaler monthly.
  • Collect information from patients regarding nutritional needs.
  • Provide nutritional education to patients and/or families.

Maintain list of problems to discuss with the Consultant Dietitian, Clinical Manager, Director,

and cooks. Assist in meal planning and ordering in absence of cooks.

Supports the strategic goals and mission/vision/values of Centerstone at all times when interacting with consumers, co-workers and professionals from other organizations and presents a positive and professional demeanor.

Takes initiative to prevent and resolve problems and offers recommendations for improving services and transforming Centerstone into an organization that embraces excellent customer experience.

Attend staff meetings, clinical staffings, and other internal meetings as assigned. Participate on committees as assigned, including quality assurance functions. Maintain appropriate communication with other employees and work as an effective member of treatment team.

Meet and maintain applicable certification and licensure requirements.

OTHER DUTIES AND RESPONSIBILITIES
Participate in training designed to enhance job-related skills. Cover residential telephone lines as needed. Perform other duties, not inconsistent with qualifications and regular duties, as assigned.

RESPONSIBILITY
Supervisory Controls: The Manager assigns work priorities, provides ongoing clinical supervision, and interprets and enforces policies and procedures. Guidelines: Board, Administrative and program policies, licensure, accreditation, statutory and regulatory standards restrict the position's discretion in completing job tasks. Staff has the prerogative to propose changes in practice, procedures and policies that affect their team.
