DIRECTOR OF OUTLETS

Hotel Nikko San Francisco, voted a Best Place to Work by San Francisco Business Times, is a luxury property located just off Union Square in Downtown San Francisco, with 532 guest rooms and suites and 22,000 square feet of meeting and banquet room space and has recently undergone a multi-million-dollar renovation. We boast 4 outlets:24 hours Room Service, ANZU Restaurant, Kanpai Lounge, and our premier showroom Feinstein's at the Nikko.

We are currently searching for an energetic and personable exemptDirector of Outletswith luxury full service Food and Beverage managerial experience. This position will assist the Director of F&B in overseeing the delivery of an excellent guest service experience in our Outlets and within the hotel. This position will report to the Director of F&B.

This person will work closely with our Quality Assurance department to ensure the Forbes 5 Star service standards are trained, delivered, implemented, and are consistently being upheld in all outlets to include Anzu, Anzu Bar, Room Service, Kanpai, Feinstein's Showroom and Imperial Lounge. Quality Assurance will work closely with this position on inspections, detailed training, and reviews. This individual will need to be comfortable with taking direction from several managers and Quality Assurance department.

Responsibilities:



  • Ensures all outlets are in compliance with standards, building upon standards to achieve excellence everyday
  • Monitor guest comment cards for trends, creates action plans and addresses trends
  • Ensure excellent guest satisfaction, adhering to the Forbes 5 Star Standards
  • Handle or assist with any guest or employee related issues, follow-up as necessary.
  • Provide employee morale and a positive working environment, handling any concerns and recognizing positive performance.
  • Implement new trainings and train employees, ensure proper follow up is taking place.
  • Schedule staff and managers based on business levels.
  • Conduct monthly inventory process, using the hotel's inventory control system.
  • Assist in the design and development of division policies and operating budget including, but not limited to revenue, staffing, forecasts, payroll-costs, together with the Assistant Director of Food & Beverage.
  • Assist in selection and supervision of all Outlets Managers, Supervisors, and Hoteliers.
  • Establish and implement annual goals for F&B outlets, Revenue and Service Standards.
  • Enforce liquor-dispensing laws in all outlets.
  • Supervise, direct, coordinate, influence, and persuade staff in order to maintain Hotel Nikko service standards and Forbes 5 Star Standards.
  • Assist in menu development and promotions.
  • Train staff on new menus and conduct tastings with culinary for selling tools for guests.
  • Distribute workload amongst hoteliers to ensure that cleaning, side work, and set-up is ready for the next shift.
  • Interview, select, counsel, and discipline staff in accordance with hotel philosophy and policies.
  • Handle and resolve all guest complaints and staff difficulties in accordance with Nikko Service Standards policies and practices; i.e., in a courteous, professional, and rapid manner.
  • Ensure that safety and fire code procedures, personal hygiene, and grooming are followed by staff.
  • Determine par level of all items
  • Conduct beverage inventories on regular time frames
  • Interact in courteous and professional manner with all guests, staff, and community members.
  • Attend divisional, departmental and general meetings.
  • Interact with people beyond giving and receiving instructions, particularly interaction with supervisor, hoteliers, co-workers, and guests in completing assignments, resolving staff/guest complaints.
  • Interpret and comply with a variety of instructions furnished in written, oral, diagrammatic, or schedule form.
  • Perform a variety of duties, often changing from one task to another of a different nature without loss of efficiency or composure.
  • Maintain a clean and safe work area.
  • Perform related duties and special functions as assigned.


Qualifications

Qualifications:



  • Minimum 8 years management experience in luxury/fine dining Food & Beverage within a hotel or restaurant.
  • College degree, preferably in hotel management.
  • Thorough knowledge of food and beverage cost controls.
  • Thorough knowledge and experience in food and beverage operations.
  • Thorough knowledge of imported and domestic wines, alcoholic beverages and mixers.
  • Thorough knowledge of all aspects of service.
  • Thorough knowledge of California State liquor laws, regulations and distribution systems.
  • Overall knowledge of hotels and how food and beverage fits into the overall structure preferred
  • Previous background in a room service operation a plus.
  • Vast knowledge of cuisine, mixology, and wine.
  • Knowledge of restaurant operations, food safety and handling and an understanding of all laws in accordance to serving alcoholic beverages.
  • Strong organizational skills.
  • Be a proven mentor or coach with a strong commitment to follow through.
  • Ability to work as a team in all settings and circumstances.
  • Excellent written and verbal communication skills (in English)



Work Conditions:



  • Sitting occurs approximately 30% of the time.
  • 60% of tasks are performed from non-seated position. Tasks may include walking through hotel, including areas of extreme heat or cold, lifting and carrying trays and transporting cases of wine. Other tasks may require sitting, standing, walking, lifting, reaching, pushing, pulling, and grasping. Length of time to complete tasks may vary from day to day, task to task.
  • Talking and hearing occur continuously in the process of communicating with guests, supervisors, and subordinates.
  • Vision occurs continuously with the most common visual function being those of near and color vision and depth perception.
