The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Assistant Director of Food & Beverage (F&B) is responsible for supporting the Director of Food & Beverage in overseeing all aspects of the hotel's food and beverage operations. This role ensures exceptional guest experiences across all outlets, maintains the highest operational standards, drives revenue growth, and fosters a motivated, high-performing team in alignment with the hotel's luxury brand standards.

What You'll Do

Operational Management

• Assist in managing all food and beverage outlets, including fine dining restaurants, bars, room service, banquets, and catering.
• Ensure consistent delivery of high-quality service and guest satisfaction across all outlets.
• Monitor daily operations including staffing, inventory, food quality, and service standards.
• Implement and maintain standard operating procedures aligned with hotel and brand expectations.

Financial Management

• Assist in budgeting, forecasting, and financial reporting for all food and beverage operations.
• Monitor revenue performance, control costs, and support initiatives to optimize profitability.
• Implement effective inventory management and cost-control measures.

Team Leadership & Training

• Supervise, train, and motivate food and beverage managers and service teams.
• Conduct performance evaluations and support training programs to enhance skills and service consistency.
• Foster a positive, professional, and accountable work environment.

Guest Experience & Quality Control

• Ensure all food and beverage offerings meet luxury standards for quality, presentation, and hygiene.
• Manage guest feedback and resolve concerns promptly and professionally.
• Collaborate with culinary and service teams to develop innovative menus, promotions, and experiences.

Compliance, Safety & Collaboration

• Ensure compliance with health, safety, sanitation, and hygiene regulations.
• Oversee adherence to licensing laws and internal policies.
• Conduct regular inspections of kitchens, storage areas, and service spaces.
• Collaborate with the Director of Food & Beverage and other hotel departments to plan events, promotions, and special offerings.
• Assist in developing strategies that enhance revenue, guest satisfaction, and brand reputation.
• Maintain flexibility to work evenings, weekends, and holidays as operationally required.

What You'll Bring

Required Education & Experience

• High School Diploma or equivalent required.
• Minimum of 5-8 years of food and beverage management experience required, preferably in luxury hotels or fine dining establishments.

Preferred Education

• Bachelor's degree in Hospitality Management, Culinary Arts, or a related field preferred.

Required Skills and Abilities

• Strong leadership, communication, and organizational skills.
• Proven ability to manage budgets, optimize costs, and drive revenue growth.
• Knowledge of high-end culinary trends, service standards, and guest experience expectations.
• Ability to lead diverse teams in a fast-paced, luxury hospitality environment.

Licenses or Certificates

• Food Manager Certification required.
