Position: Sous Chef
Location: LAI-Inglewood
Reports to: Executive Sous Chef
Salary Rate : $70,000 - $75,000

Job Description:

Overall supervision of entire Hot Food department which include:

Job Responsibilities:
  • Work with kitchen staff to produce high quality products on a consistent basis.
  • Interface and efficiently react to Customer/ Executive Chef requirements.
  • Implement customer specific menu items.
  • 3-5 years food prep / cooking background
  • Maintain HACCP standards.
  • Culinary Quality & Menu Adherence
  • Production planning and management
  • Employee Scheduling and Training
  • Food Cost Improvements
  • Food Safety
  • Menu development when required and other daily operation needs.
  • Responsible for all facets of daily hot food production including presentations for airlines, maintenance of daily requisitions, production sheets and monthly updates.
  • Ensure compliance with airline specifications, personal hygiene and food handing procedures.
  • Assist in departmental scheduling and control of hours and food cost.
  • Assist in the development and training of employees.
  • Assist in maintaining a good relationship between the departments.
  • Other duties as assigned.

Accountabilities:
  • Customer Satisfaction with menu design and presentation
  • Budgeted labor and food costs achieved with adjustments for airline changes
  • All FSQ standards and procedures maintained at all times
  • Maintain positive and safe work environment


Job Qualifications:

  • Degree or certification from cooking or culinary college or program
  • Hospitality skills
  • Culinary skills including menu design, Garde Mange and creating innovative dishes.
  • All aspects of supervision of similar number of staff members.
  • Food safety standards for food production work spaces.
  • Financial skills for managing budgets, food and labor costs including scheduling hours.
  • Computer skills for Microsoft office programs - Word and Excel.
